Since opening in June of 2013, the restaurant has been serving slow food fast the only way they know how \u2014\u00a0from scratch with fresh, local ingredients, innovative flair and a strong community focus. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201c[Kitchen Table has] really become our family \u2014 from the team and farmers we work with to the regular customers who hang out with us every day,\u201d said Colin. \u201cOne of the great things about [the restaurant] is that things are constantly changing and yet we are able to consistently produce a familiar environment where people feel comfortable, accepted and taken care of.\u201d<\/span><\/p>\n<p><!--more--><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-14523 lazyload\" data-src=\"http:\/\/54.218.64.113\/blog\/wp-content\/uploads\/2017\/06\/Colin-and-Jessica-1.png\" alt=\"Kitchen Table Colin and Jessica Duggan\" width=\"945\" height=\"630\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 945px; --smush-placeholder-aspect-ratio: 945\/630;\" \/><\/p>\n<p style=\"text-align: center;\"><em>Photo courtesy of <a href=\"http:\/\/kitchentableomaha.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kitchen Table<\/a><\/em><\/p>\n<p><span style=\"font-weight: 400;\">And when Colin says people are taken care of, he means it. Partially motivated by Jessica\u2019s plant-based lifestyle, many dishes can accommodate vegetarian, vegan and gluten-free diets. And, according to Colin, they look for inspiration whenever and wherever it strikes. \u201cInspiration comes from everywhere,\u201d he said. \u201cMostly from the truly great ingredients we\u2019re lucky enough to work with, but it\u2019s not uncommon for a regular customer to sit at the counter and throw out a great idea!\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The inspiration doesn\u2019t stop at the counter. \u201cI have ideas and Colin makes them come to life,\u201d Jessica explained. \u201cAlong with our amazing team, we work hard to include daily vegetarian options that can be spun vegan and many items have a gluten-free spin so all guests can come in and have options to enjoy. We don\u2019t want anyone to have to settle because of a dietary restriction.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Jessica and Colin learned much of their flair for plant-based cooking while living in San Francisco. \u201c[In the city, we learned] that good vegetarian options can exist aside from a small salad,\u201d said Jessica. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Colin went on to explain, \u201cKitchens can be very repetitious places. The most inspiring thing about working in San Francisco was the opportunity to create and innovate, and that comes from working on dishes backward: starting with great local and seasonal ingredients and allowing that to dictate the end result as opposed to imagining a dish and then searching for the ingredients to create it. This results in an ever-changing, always mouth-watering, array of options. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThe core menu is relatively stable,\u201d said Colin. \u201cThere are a few items \u2014 the meatloaf sandwich, the whole bird, Smoked Steelhead and deviled eggs \u2014 that have been on the menu since day one. We always have a pork sandwich, a vegetarian \u201cjam\u201d sandwich and the PB and J that change with the seasons along with the salads and snacks. The daily sandwich specials are constantly changing; we always have a meat and a vegetarian option that can usually be spun vegan and very rarely repeat exactly.\u201d \u00a0<\/span><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-15013 lazyload\" data-src=\"https:\/\/npdodge.blog\/wp-content\/uploads\/2017\/06\/KT-Tacos-1.png\" alt=\"Kitchen Table Omaha Local Restaurants\" width=\"945\" height=\"709\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 945px; --smush-placeholder-aspect-ratio: 945\/709;\" \/><\/p>\n<p style=\"text-align: center;\"><em>Photo courtesy of <a href=\"http:\/\/kitchentableomaha.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kitchen Table<\/a><\/em><\/p>\n<p><span style=\"font-weight: 400;\">The dinner menu is where Jessica and Colin get even more creative \u2014\u00a0and if you don\u2019t believe us, you should follow them on <\/span><a href=\"https:\/\/www.instagram.com\/eatkitchentable\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">Instagram<\/span><\/a><span style=\"font-weight: 400;\">. \u201cDinners follow a nightly theme,\u201d Colin explained. \u201cAgain, they always have a meat and a vegetarian option that can usually be \u00a0made vegan.\u201d You\u2019ll find juicy burgers on Tuesday, focaccia pizza on Wednesday, tacos on Thursday, and pasta on Friday. According to Colin, this basic structure allows for a scratch-made blank canvas every night of the week. Using seasonal ingredients from local purveyors and farmers, a new creation can be reinvented each evening.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The scratch-made mentality is constantly evinced in the team\u2019s commitment to making all the bread in-house.
