Some people love it; some people hate it, but for those who love it, it becomes the go-to dish at every breakfast outing.

Let’s start with a quick cooking lesson. A classic eggs Benedict consists of a poached egg, ham and Hollandaise sauce on top of an English muffin. Each part of the dish adds its own characteristics. The bread should be toasted and chewy; the egg should be soft; and the ham should add a touch of salt to contrast the creamy Hollandaise.

The star of the show, of course, is the Hollandaise. One of the five French Mother Sauces, it’s made of butter, egg yolks and lemon juice. It should be runny enough to slide over the egg, but still maintain a thick and creamy texture without separating.

Once you have the basics down, you can start adding twists and variations — like the crab cakes, bacon and rosemary focaccia bread at some of our local favorites. In other words, it’s everything you could possibly need all in one delicious package. Our favorite, the Eggs Blackstone is all of that, but replaces the ham with pecan smoked bacon and grilled tomatoes.

Over Easy

Photos courtesy of Over Easy

Brunch: Daily 7 a.m. – 2 p.m.

Over Easy is all about local, community-centered fare and atmosphere.
